CMYK color is used in printing in order to produce a wider color range, as opposed to RGB that has a narrower color range when applied in printing.
Bleed is part of a working document for printed products that extends beyond the finished size. Where color is desired to be printed to the edge of the finished product size, you will need to extend your artwork into the bleed area.
